Smorgas_of_Borg's Jamaican Cole Slaw

Ingredients:
4 cups Shredded cabbage
    (about 1/2 of a small head, red and/or green)
1/4 cup Shredded carrots
1/2 cup Finely chopped walnuts
1/2 cup Mayonaise (lite mayo may be used)
2 Tbls Sugar (or substitute)
1 Tbl Cider vinegar
1 Tbl Dry Jamaican Jerk Seasoning
    (I prefer McCormick Gourmet Selections)

Combine cabbage, carrots and walnuts in a large bowl; set aside.

Mix together remaining ingredients.

Spoon over cabbage mixture and toss well.

Cover and chill in refrigerator for at least one hour before serving.

Serves 8 (1/2 cup servings)

A great variation on the usual boring cole slaw. This one works great as a stand alone treat or as a side with any fried meat or spicey entree. Enjoy!

SuzzieQ: I just never have been a big fan of Cole Slaw but this recipe beats all I've ever tasted. It must be the walnuts! The blend of red and green cabbage adds to the color and flavor. This as a fast, attractive dish. I usually make the whole batch, eating it over several days. Even then, this slaw holds its color and texture! Try it soon.
